due to the handicapped nature of my household....always having a maid to tend to our needs(not proud of that at all)....i feel obliged most of the time to not do anything at home..that includes cooking, baking, etc...
The thing is, I love food and love making it too...feeling sien at 11.30pm, i headed downstairs to make scones (for the first time) and u noe what? It came out to taste better than ms.reads' flaky, unbuttery, dry over-priced scones...sorry la...
how to make them?
Ingredients :
Part A
28og flour
50g fine sugar
10g baking powder
a pinch of salt
Part B
76g unsalted pure butter (recommend lurpak)
Part C - mixed in a cup
one large egg (lightly beat) (buy fresh ones from the market not supermarket)
120g whip cream (recommend anchor)
1 teaspoon vanilla extract
Before u start, pre-heat oven to 190degree celcius.
1) whisk Part A until well mixed
2)Fold in Part B, butter should be light cold still, not melted. Use a spoon.
3)Stir in Part C to mixture, then fold with a spoon. U'll get like bread crumb looking texture..
4) dust flat surface lightly with flour....pour out your mixture and knead very gently into a dough...
5)Line baking try with paper....make round scone-like shapes and arranged neatly on paper lining....(note that dough will expand about 30%)
6)crack one large egg and beat it lightly n stir in 1 tblspoon of whip cream. brush scones with this to make it brown nicely...
7)Bake for about 15mins....test occasionally with a toothpick or something...make sure not sticky inside...
Done...u can like make some cream/mascarpone cheese + whipped/devon cream + sugar + squeeze of lemon to be scones cream topping or something...actually normal whip-ped cream will do....
